A easy family meal recipe with butter beans and cheese. This makes a great spinach casserole, and it bakes in less than 30 minutes. The recipe is naturally vegetarian, and can be adapted to be vegan. It works great as a side dish or an entire meal. This dish serves 4.
INGREDIENTS:
2 cloves elephant garlic, finely crushed
6 oz. canned butter beans
6 oz. spinach, washed and shredded
2 oz. butter, melted
3 oz. all-purpose flour, sifted
1 oz. regular oats
3 oz. Stilton cheese, grated
seasoning, according to taste
METHOD:
Preheat oven to 400 F (200 C). Using a bowl, combine garlic, butter beans and spinach. Season according to taste.
In a separate bowl, combine flour, oats, half the Stilton cheese and seasoning. Spoon bean mixture into an ovenproof dish. Top with the flour mixture and sprinkle on remaining cheese. Bake for 25 minutes until golden. Serve hot with garlic bread and a light salad for a quick family dinner.
